ive spent a bit of time in my other happy place today - making a good ol mess in the kitchen. Ive been looking for a nice olive oil cake to experiment with, and came across this Yoghurt and Olive Oil cake.
Its a lovely moist cake, and was quick to put together as well. I actually used apricot yoghurt, together with our two black dogs e.v.o.o it produces a subtle cake with a fruity flavour that would be nice with a good cup of tea!
Preheat the oven to 170C (fan)
1/2 cup yoghurt
2/3 cup sugar
3 large eggs
11/2 cups plain flour
2 teaspoons baking powder
pinch of salt
1 tablespoon grated lemon zest
1/2 cup two black dogs extra virgin olive oil
Grease the bottom and sides of a 9inch round cake pan (i used a silicon one).
In a large bowl, beat together the yoghurt, sugar, eggs.
Sift together the flour, baking powder, salt and fold into the wet mixture.
Stir in the lemon zest then add the oil and fold in until blended. Pour the batter into the pan.
Bake for 20-25 minutes or until a skewer comes out clean when inserted into the middle.
